Granola / While You Were Out

4 cups rolled oats
1/2-3/4 cup walnuts
1/2-3/4 cup pecans
1/3 cup coconut flakes
handful of currants
couple shakes of pumpkin pie spice
2 T molasses brown sugar
1/2 t ground ginger
1/4 cup honey
2 T canola oil
1 T butter
scant 1/2 t sea salt

Mixed first eight ingredients in bowl. Melted honey and butter/oil in a pan and poured it over. Stirred together with salt. Baked on two parchment lined trays at 350° for 25 minutes, shifting pans around as one got more done than the other. Let cool and pressed down using a spatula so there'd be chunks.
